Collards

Endeared to southerners, collard greens have distinctive smooth and glossy leaves which imparts heat and cold tolerance and resistance to cabbage worms and loopers. Delicious steamed and are at their sweet tender best early in the season or in late fall after being nipped by a frost.

Beets

Deliciously edible beet greens are perfect in salads or cooked or transplant the seedlings out to become beautiful beets.

Escarole

Hardy and delicious. A favorite at Cate Farm. This makes the most delicious salad! Seriously crunchy, with green leaves with a creamy blanched heart. May be cooked or braised as well.

Raddichio

This round-headed radicchio is delicious in salads or braised. Commonly eaten in Italy and France these slightly bitter greens (or “reds”) are truly a tasty treat. Outer leaves will have a astronger bitter flavor but the tender, crunchy “heart” will knock your socks off! Plus, a little bitter is so good for you. Even if you don’t eat them they make a stunning ornamental.
